We're keeping our protobuf pin at 5 and shouldn't need to upgrade to newer types-protobuf either, to match.
Maybe related to `swift_prefix`? Ref: https://github.com/bufbuild/buf/releases/tag/v1.62.0

Can leave this version alone now that it's pinned, but figured we might as well get the protos reverted back (see #415). Ref: https://github.com/bufbuild/buf/releases/tag/v1.62.1
